Within the first six months of 2013 the production of meat in carcass weight in Ukraine has increased by 9.3% to 1.13 million tons. However sausage production remained at the same level. This means that Ukrainians consume more raw meat. This was reported in the Association Ukrainian Agribusiness Club (UCAB).

 In 1991 meat consumption in Ukraine amounted to 74 kilograms per capita, of which 28% was meat and 72% were sausages. Along with the population solvency decrease the consumption of meat products has declined too. In 2001, consumption was 33.6 kg, and the structure of sausages and meat has already distributed as 50% to 50%. Last year meat consumption was 54.4 kg per capita, 30% of which was consumed in the form of sausages, and 70% directly as meat. Based on the FAO forecasts, in 2020 the raw meat will constitute 80% within the total meat products consumption by Ukrainians.

Trying to meet the consumers demand, more and more meat plants start introducing chilled and frozen meat to their production range for retail sale. Supermarket networks offer richer variety of raw meat products and provide temperature and hygienic conditions of storage, thereby replacing the traditional open markets. With the population welfare growth the sausage consumption will be increasingly replaced by meat dishes and meat, the advisor on agricultural markets Alina Zharko concluded.
